2 quarts nonfat, low-sodium chicken broth
1 lb frozen black-eyed peas
1 lb frozen chopped onions
1 lb frozen crinkle-cut carrots
four links chicken-and-garlic sausage
(1/2) tbsp minced garlic
(1/2) cup brown rice
(1/8) tsp fresh ground mixed peppercorns
(1/8) tsp cumin
1 pinch cayenne pepper
Chop the sausages. Put everything in a big stock pot, cover, and simmer the hell out of it. Then take the cover off and boil it down to reduce the fluid volume.
It's good! Double it next time, so it lasts more than two days. Pig.
