Up to 2007, I never took a job for which I had all the desired skills. I was offered positions I could fill with a little (or even a lot of) training. I started work, I learned some new things, I did my job.
Since my last 'real' job died, in mid-2009, I'm only seeing offers for things I'm overqualified to do. If a job requires ten skills, and I have nine, I don't get an offer. Seriously -- I have been complaining bitterly about this for two years, to anyone unfortunate enough to listen.

Companies are grousing that they can't find skilled workers... With an abundance of workers to choose from, employers are demanding more of job candidates than ever before. They want prospective workers to be able to fill a role right away, without any training or ramp-up time... In other words, to get a job, you have to have that job already.
