1. I love fresh bread.
2. I like controlling the contents of my food.
3. I like to produce physical objects with my hands.
4. Unemployment gives a body some spare time.
The first thing I noticed, while learning how to make bread from The Internet, is that Jim Lahey can produce the staff of life without kneading. This is relevant to my interests, because I like eating more than cooking and cleaning.
The second thing I noticed is that nutrient-dense bread recipes are abundant. High-fiber, high-protein bread is easy to spec out. You can even specify a cool lipid profile.
I mushed the Lahey idea with a few high-nutrient bread recipes. This maximized my chances of spectacular failure. I did want a dense, hearty loaf; but I worried about producing a brick with the crumb and density of oil shale.
( Bread 1.0: No-Knead )
