wicked good tilapia
Jun. 11th, 2008 10:36 amGet some vacuum-packed frozen tilapia loins from Trader Joe's, because you've failed to catch your own damn fish. Thaw them for 48 hours in the fridge. Maybe 24 is enough, but I forgot they were in there.
Preheat oven to 400.
Line a glass baking pan with lemon wheels.
Add olive oil, a little soy sauce, rice wine, black pepper, and white pepper to the pan. (Do not submerge the lemon wheels -- their job is to keep the fish elevated.)
Lay fish over lemon wheels.
Put olive oil, minced garlic, black pepper, white pepper, dill weed, rosemary leaves, and salt on the fillets.
Cover the pan with Aluminum foil.
Bake 17 minutes-ish, remove from oven, allow to sit (covered) on stovetop for 10 minutes or so.
Serve with white rice and sautéed green beans, if you got 'em. I didn't.
This paired nicely with lime-garnished Corona. Now it's summertime.
