harsh footnote pasta
Apr. 2nd, 2010 05:24 pmBoil up some whole-wheat, high-protein pasta. While that's going, warm up the corresponding volume of red pasta sauce. Stir three rounded tablespoons of nutritional yeast flakes(1) into the warm sauce. Now wilt some arugula.(2) The final step in the preparation of this dish is to mix everything together. (The arugula is xenophobic, but it can be teased apart with patience.) Salt and pepper to taste.
1. This is, like, pure protein. Tastes a little like salty cheese, but not quite. You won't like it as much as parmesan, but how much do you like feeling fat?

I had my first arugula of the season last night, along with various heirloom lettuces, a tiny bit of garden cress, a few baby spinach leaves, and a couple of even smaller baby endive leaves.
In a couple of weeks all these plants will be so large that I'll be cringing at the thought of trying to keep up with eating them.
